Taste
Tacos
Ingredients
- 600g heart smart beef mince
- 1 teaspoon cumin
- 1 teaspoon mild paprika
- 1 teaspoon dried oregano leaves
- Salt and freshly ground black pepper
- 1 cup passata
- 2 cups shredded lettuce
- 2 tomatoes, chopped
- 1 carrot, grated
- 1 cup tasty or cheddar cheese, grated
- 1 avocado, peeled, stone removed and chopped
- Hard and/or soft tacos shells
- Salsa, to serve
Method
Preheat oven to 180°C. Heat a large non-stick frypan over high heat. Add mince and cook until browned. Break up large pieces with a spoon. Add cumin, paprika, oregano leaves and salt and pepper. Mix well to combine, then add passata.
Reduce heat to low and simmer for 10 minutes. Add some water if the mixture becomes too thick. Taste and add more salt if necessary.
Heat taco shells in the oven for 5 minutes (wrap soft shells in aluminium foil).
Place warm shells on a serving platter, offer all the toppings in small bowls and let the kids choose what they want in their taco. A messy, but fun meal for everyone!Tuesday, September 25, 2012

Taste
No-Bake Strawberry Cheesecake
Ingredients
Crust
8 plain sweet biscuits, crumbed
2 tablespoons melted butter
1 tablespoon honey
Filling
85g gelatin
2/3 cup boiling water
500g cottage cheese
500g cream cheese, softened
2 tablespoons sugar
1 teaspoon vanilla
Topping
340g fresh strawberries
2 tablespoons strawberry jam
small mint leaves, to garnish
Method
Coat an 8" springform tin with spray oil.
Mix crumbs with butter and honey, press firmly over the base and slightly up the side of the tin, place in the freezer. Dissolve gelatin in boiling water in a 1 cup measure. Puree cottage cheese in food processor until creamy. Add gelatin, cream cheese, sugar and vanilla, process until smooth.
Pour into crust, smooth top, cover and place in fridge for 4 hours or until set.
Washa nd dry berries, remove stems, quarter each lengthwise and place in bowl, add jam and gently toss to coat. Remove sides of springform tin, place cheesecake on serving plate , spoon on berries and sprinkle with mint leaves.

Taste
We made this batch of homemade baked beans to have on toast one night recently....
so easy and oh so yummy!
Simply fry off 1 large onion and 1 diced zucchini, add 2 tins of tomatoes,
1 tin of cannellini beans, salt, pepper and some cumin powder.
If you're feeling adventurous, you can add a diced carrot, or a small tin of corn, fresh herbs
...anything really!!

Maple Baked Beans
Ingredients
- 1 tablespoon vegetable oil
- 200g speck+ or flat pancetta, trimmed and chopped
- 1 brown onion, chopped
- 1 teaspoon mustard powder
- 2 teaspoons tomato paste
- 1 teaspoon Worcestershire sauce
- 1 tablespoon brown sugar
- 2 tablespoons maple syrup
- ½ cup (125ml) chicken stock
- 1 cup (250ml) tomato puree (sauce)
- sea salt and cracked black pepper
- 2 x 240g g cans butter beans, drained and rinsed
- toasted sourdough ore rye bread, to serve
Method
Heat oil in a saucepan over high heat. Add the speck and cook for 5 minutes. Add onion and cook for 2 minutes or until browned. Add the mustard powder, tomato paste and Worcestershire and cook for 2 minutes. Add the sugar, maple syrup, stock, tomato purée, salt and pepper and cook for 5–8 minutes or until slightly thickened. Add the beans and cook for a further 2–3 minutes or until heated through. Serve with the bread. Serves 4.
